How to make Fruit Riot at home
My first try at this recipe was a disaster, so I had to start over! Here’s my perfected method for making fruit riot at home:
1. Prep your fruit
Wash and de-stem your grapes if you’re using them. Then, freeze them solid before starting your candy-making process. Ensure they are completely frozen before proceeding.
Using pre-frozen mango or pineapple? No prep work is needed! Here’s a crucial tip: keep your fruit completely frozen until you start coating it. Avoid letting it sit out, even for a short 10 minutes.
During my first attempt, I made a crucial error. The escaping juices and water prevented the formation of a sugary, flaky crust.
2. Prep your liquid mixture
Mix these ingredients thoroughly in a big bowl:
This liquid blend ensures the dry, tart candy mix sticks well to your sweets.
3. Prep your dry mixture
In a separate large bowl, mix together these ingredients:
*Wow,this is seriously sour! As a huge sour candy fan,I was surprised by how intensely sour the citric and malic acid coating is,even in small amounts. Start with a tiny bit and add more to your liking!
This quantity of coating perfectly covered a bag of frozen mangoes,a bag of frozen pineapple chunks, and a full box of grapes. Adjust the recipe based on the amount of fruit you’re using. It’s always better to have a little extra coating than not enough!
4. Toss your frozen fruit in the liquid mixture
Just put your fruit in the bowl with the liquid and mix it well. Use your hands or a big spoon to toss it. I mixed grapes, mango, and pineapple, and it turned out great!
As you mix, the coconut oil will begin to harden. Don’t worry, this is expected.

5. Toss your frozen fruit in the dry mixture
Gently move the fruit into the bowl containing the dry ingredients. Be sure to leave any extra liquid behind.
If the fruit isn’t fully covered, prepare more coating and add it to the bowl.

6. Store in the freezer or enjoy!
Enjoy your frozen treat right away! Alternatively, store it in a plastic bag or large bowl in the freezer for later.
To enjoy your candy fully, let it sit at room temperature for 5-10 minutes. This softens it, making each bite easier and more enjoyable.

DIY Fruit Riot (Frozen sour fruit candy)
This recipe is a copy-cat for the TikTok viral Fruit Riot candy that uses the EXACT same ingredients as the real deal. It’s a super easy and delicious alternative to sour candy, using real fruit.
Ingredients
Fruit of your choosing ( i used all 3)
- Cotton candy grapes or regular grapes based on your preference (pre-washed, frozen, and de-stemmed)
- Frozen mango chunks
- Frozen pineapple chunks
Liquid Coating
- 1/4 cup of melted coconut oil
- The juice of 1/2 a lemon.
Sour Candy Coating (Powder)
- 1 cup granulated sugar
- 1/4 cup corn starch
- 1/4 cup soluble corn fiber
- 1/2 tablespoon citric acid*
- 1/2 tablespoon malic acid*
Instructions
- Prep your fruit: If you are using grapes, wash them,de-stem them, and freeze them before you attempt to make your candy. Make sure they are completely frozen before you move on to the next steps. For frozen mango or pineapple, no prep is necessary, just make sure they are completely frozen until you need them for step 4
- Prep your liquid mixture: in a large bowl, combine your coconut oil and lemon juice.
- Prep your powder mixture: In a second large bowl, combine your sugar, corn starch, soluble corn fiber, citric acid, and malic acid.
- Toss fruits in the liquid mixture: add your frozen fruits to your liquid mixture and toss.
- Toss fruits in powder mixture: Transfer fruits to the other bowl with the powder mixture and toss, ensuring no excess liquid is transferred
- Store or enjoy: You can either enjoy your candy immediately or store it in the freezer in a plastic bag. When you’re ready to enjoy, let it sit out on the counter for 10 min before you eat it so it’s easier to bite into.
Notes
Citric and Malic acid are EXTREMELY sour. I would reccommend starting small and taste-testing your powder mixture.
